Summer Issue 2011

Make your own dough

2 teaspoons instant yeast

2 cups flour

1 cup water

1 tsp oilve oil

pinch salt and sugar

In a small bowl or cup put your dry yeast, salt, sugar, olive oil and pour in 1 cup of luke warm water. Let sit for 10–15 minutes, until yeast starts to expand and foam.

Put your flour into a large mixing bowl. Stir yeast mix into the flour with a fork, and as it starts to thicken, use with your fingertips. Gently knead and fold for 3 – 5 minutes until an elastic ball of dough is formed. Add more flour if ball is too sticky to handle. NOTE: You can mix and knead the dough in a large bowl OR on a flat surface. Your choice.

Sprinkle some flour inside your bowl and place in dough ball. Sprinkle some four on top of ball, and cover bowl with a damp cloth. Let sit in warm location to rise for approx. 45–60 minutes.

When dough ball has approx. doubled in size, it is ready to roll out and use for your quiche crust. That was easy!
